crock pot chicken tacos and fruit slushies
I don’t know about you but we are experiencing one of the hottest summers on record with 100 degree temps and no measurable rainfall for weeks on end. It reminds me of the summer of 1988 when we only had one room air conditioner and I was pregnant and due at the end of July. We lived on frozen treats and crock pot meals during those long months, the older kids camping out on the floor of the living room watching old movies while I tried to rest. What I would have given for Pinterest back then, with its myriad of suggestions for keeping a family deliciously fed with little effort! Here is one of those suggestions I found while looking for a little variety in the kitchen during these long, dog days of summer; I tweaked it a bit for our family. And the fruit slush recipe is a family staple! Enjoy!
Crock Pot Chicken Tacos
1 can diced green chiles
2–3 cups chunky salsa
1 teaspoon ground cumin
1 large onion, chopped
2 TBS. minced garlic
1/2 cup chopped cilantro
2-3 pounds boneless, skinless chicken breasts or thighs
1/2 cup frozen or fresh corn, optional
fresh lime
Place chicken in crock pot, top with salsa. Sprinkle veggies and spices over all. Cook on low for 8 hours; shred meat and return to pot, stirring meat into the pan juices. Spoon chicken into taco shells with whatever toppings your family likes. Drizzle a bit of lime juice over all when serving. This meat mixture is also great for salads, burritos, etc. and freezes well.
Mollie’s Wedding Fruit Slush ~ 3 dozen
I first served over 300 of these wonderful treats at Mollie and Aaron’s wedding reception. Two years later, Clayton and Stacie requested this for their wedding so Mollie, Janell, and I whipped them up in Bakersfield, California! Now they are a staple at holiday brunches and summer parties at the Campbell home.
1 12 ounce can frozen orange juice, prepared as instructed on can
1 12 ounce can frozen lemonade, prepared as instructed on can
2 or 3 16 ounce cartons frozen strawberries with juice ( sometimes more strawberries just seems like the thing to have!)
2 large cans crushed pineapple
4 mashed bananas
2 cups sugar
(You can use 1 can apricot nectar in place of lemonade)
Mix well together and put in individual cups to freeze. I typically use small clear plastic punch cups and put them either on a cookie sheet and top with plastic wrap or foil. At Christmas I like to serve this for brunch and will freeze the slush in pretty glasses.

1.We must acknowledge that we are all sinners. “For we are all become as one that is unclean, and all our righteousnesses are as a polluted garment: and we all do fade as a leaf; and our iniquities, like the wind, take us away. (Isaiah 64:6) and “All have sinned and fall short of the glory of God.” (Romans 3:23)
2.We are all accountable for our own sins before God. “For we must all appear before the judgment seat of Christ, so that each one may receive what is due for what he has done in the body, whether good or evil.” (2 Corinthians 5:10)
3.There is only one way to be forgiven of these sins and that is through the blood of Jesus Christ. “Jesus said, “I am the way, and the truth, and the life. No one comes to the Father except through me.” (John 14:6)
4.If we confess our sin to the Lord and repent of it (not allow it to rule in our lives) we can be forgiven and be in right standing with God. “If we confess our sins, He is faithful and just to forgive us our sins and to cleanse us from all unrighteousenss.” (1 John 1:9)
5.Genuine salvation will result in living lives of good works but none of those works contribute in any way to our standing before God which is based solely and completely on the finished work of Jesus Christ on the cross. “But when Christ had offered for all time a single sacrifice for sins, He sat down at the right hand of God. (Hebrews 10:12) and “Not by works of righteousness which we have done but according to His mercy He saved us by the washing of regeneration and the renewing of the Holy Spirit. (Titus 3:5) and “For by grace you have been saved through faith. And this is not your own doing; it is the gift of God.” (Ephesians 2:8)
6.We all, men and women, boys and girls, have direct access to the throne of grace because everyone who is a born-again believer in Jesus Christ is called a “priest and king” in God’s economy. “But you are a chosen race, a royal priesthood, a holy nation, a people for His own possession, that you may proclaim the excellencies of Him who called you out of darkness into His marvelous light.” (I Peter 2:9)
I believe that many of the false teachings within the patriocentric movement are in direct contrast to these Scriptures and I would encourage each of us to first examine what we believe about Jesus and His work on the cross, its implications and its marvelous power.
Secondly, I would challenge anyone reading here to examine your own heart and ask yourself whether you have been trusting in good works….baptism, homeschooling, church attendance, modest dress, the list goes on and on, or if you have placed ALL your faith and hope in Jesus’ blood and righteousness alone.
And finally, I would challenge you to examine the teachings within your own church system, whether it is Protestant, Greek Orthodox, Roman Catholic, etc. Ask yourself what your church teaches about ecclesiastical authority and family authority. Does it line up with the Word of God? It is a top down system that requires certain works in exchange for a relationship with Jesus Christ or do you have the assurance that you are saved for eternity by His death on the cross in your stead? Does it teach that the fruits of the spirit and obedience to all the one anothers is what our lives will demonstrate or is there a list of man made rules?

I love the crockpot chicken tacos. I have been making it like that for a few years and it is one of my family’s favorites. Also, the chicken taco mixture is good for chicken enchiladas, too, or quesadillas, if you have leftovers.
That looks delish and I’ll probably try some form of it this weekend. Right now it’s only my husband and me at home, and he doesn’t like a lot of stuff, so a lot of things I cook just for myself, one serving at a time. But I fix lunches for the week on the weekend before and I’ll bet this would work really well.
There’s a dish we like that we call “It’s Bean Dip.” Bean dip is part of it, and I became aware several years ago that when my husband and child knew I was going to make it, they waited outside the kitchen for me to open the bean dip can, and the cats to rush in thinking it was canned cat food, and me to say, “It’s bean dip! It’s just bean dip! You don’t want it!” I heard them laughing one day and figured that out. The basic dish is a glass bowl layered with bean dip, then canned diced tomatoes, then grated cheese, and you microwave it until it’s hot and serve with tortilla chips. But you can add all sorts of things: corn, black olives, sauteed mushrooms and onions, browned ground beef, whatever. And any child old enough to work the microwave can make it.
Just made the crockpot chicken tacos last night. They were great and easy!
